One way to think about this is to envision a car trip. While the car might hit 100 or even 120 MPH (or 160 to 200 KPH for my European friends), most of the time the car is driven at a much slower (and saner) speed, such as 60 MPH.

Let's suppose that you had been poking along at 20 MPH for some time. If you knew that you had to average 60 MPH for the trip, at some point you would have to speed up. In fact, you would have to have a burst of a higher speed than 60 MPH just to get your average back up.

This is somewhat analogous to the way many modern slots work. They may average 60 MPH for much of the play. At this speed you will lose slowly. Whenever the speed drops back to 30 or 40, your losses will increase. However, you know that eventually they must exceed 60 MPH to order to get the average payoff rate back up.

The problem for most of us is that there is no way to tell when a slot is in one of its pokey modes or is ready to rapidly accelerate to get the averages back in sinc.
